If you are looking for an easy appetizer for a brunch you’re hosting, this is it! I made a large brunch this year when the Colts played the Jags in London, and it was so nice to have this for guests to eat while my French Toast Bake was finishing in the oven! They are super easy to do… just require a little prep the night before, and tossing in the crock pot the day of! I cook these on high in the crock pot, mostly because I’m making them the morning of a brunch and don’t have hours to wait before they need to be served! However, if you want to make these for a tailgate or football watch party, you can cook on low for 4 hours.
1 lb Bacon (I used a thick cut maple bacon)
1 package Mini Smoked Sausages
1 cup Brown Sugar
Cut the bacon into thirds, or halves (enough to wrap a piece around the bacon). Wrap each mini smoked sausage with the bacon, and secure with a tooth pick. Then, in your crock pot, put down a layer of bacon wrapped sausages. Sprinkle with the brown sugar, then repeat until you have placed all sausages in the pot, and all of the brown sugar has been used. Place on low for 4 hours, and not only will your kitchen smell AH-MAZING, but your guests will be quite happy!
Here’s a tip for you – when I made these for a party, I did the bacon wrapping ahead of time. Then, the day of my party I just had to put them in the crock pot with brown sugar and let them cook! Very easy!
