We made these little guys for a bridal shower, and they are a delicious vegetarian appetizer! What I like about them, is that you can typically find the ingredients all year round!
2 packs Mini Fillo Shells (like these)
1 container Hummus (you pick the flavor)
1 Cucumber, diced
1 jar Roasted Red Peppers, drained and diced
1 pack Feta Cheese, crumbled
5 Basil Leaves, Chopped
Salt and Pepper
Bake the shells according to the package. In a mixing bowl, combine the diced cucumber, red peppers, feta, and basil. Mix well, then salt and pepper to taste. Once the shells are cooked, add in a small amount of hummus (roughly 1/2 tsp) to each. Then, top with the vegetable mixture, and serve! I personally like a garlic or red pepper hummus with this, but if you use original, it may even be good to add some Greek salad dressing to the vegetable mixture for flavor!
