This recipe is so simple, so tasty, and pretty healthy! It lasted me a whole week for lunch – what’s better than something you can just throw in a crockpot and forget about for a few hours?!
1 Red Bell Pepper, sliced
1 Yellow Bell Pepper, sliced
1 Green Bell Pepper, sliced
1 Yellow Onion, sliced
1 lb Chicken Breasts or Tenders
1 packet Taco Seasoning (you pick the spice)
1/2 tsp Salt
Cayenne Pepper – if desired!
1/2 cup Chicken Stock
Taco Toppings of your choice!
Add all peppers and onions to the bottom of a pot with the seasoning. Stir with a spoon. Next, add in the raw chicken to the crockpot. Pour the chicken stock over everything and cook on low for about 4 hours, or high for about 2 hours (just keep an eye on the chicken). Once the chicken is cooked (mine took less time because I used chicken tenders), remove from the crockpot and shred with forks. Then, add the chicken and the juices back into the pot, and stir it all together. You can keep this on warm until you’re ready for dinner, or you can serve it in your favorite taco shell with toppings! Make sure to taste the seasoning before serving!
