Brie and Bacon Jam Crackers


I found my new kind of jam: BACON JAM. This stuff is absolutely incredible, and lasts in the fridge for weeks! Packed with flavor, it is delicious on bread, crackers, chicken – you name it! The below appetizer was also for our Bachelorette watch party. Rather than using crostini, I used Triscuits, and it was easy and delicious!


1 1/2 lbs Bacon

2 tbsp Butter

4 large Vidalia Onions, minced

1/4 cup Dark Brown Sugar

1/4 cup Sherry Vinegar

2 tsp Fresh Thyme

1 tsp Black Pepper

1/4 tsp Cayenne Pepper

1 tbsp Balsamic Vinegar

1/2 tsp Salt

1 wheel Brie

1 box Triscuits (or crostini)

Fresh Thyme for garnish (optional)

In a large pot, cook the bacon in strips until it is completely crispy (probably 8-10 minutes). If you want to do this in a skillet, feel free, but make sure to reserve 1 tbsp bacon renderings. Once the bacon is cooked, set on a rack or paper towel so the grease can drip. In the same large pot over medium heat, add in the butter, bacon renderings, and chopped onion and salt. Cook until the onions are translucent (probably will take 10-12 minutes). While this is cooking, chop bacon in very tiny pieces (minced). Once the onions are cooked down, add in the brown sugar, black and cayenne pepper, vinegar, bacon, and water. Cook for another 15-20 minutes until it looks like a jam. Last, stir in the balsamic vinegar. The first time I made, this, I actually blended the mixture to make it even smaller. Please note – this makes a TON of jam. So, I’d recommend getting some mason jars to hand it out as gifts!

Cut the brie into small squares, or strips (depending on if you’re using crackers or bread). Place a dollop of warm jam, and then garnish with some thyme. I’ve reheated the jam a few times as well over low heat on the stove and it tastes like the day I made it! Enjoy!
