With Cinco de Mayo a few days away, I wanted to share my FAVORITE guacamole recipe. When I lived in San Diego, where avocados were inexpensive and available almost year round, I mastered the “table side” quac recipe. Make this for your next fiesta, and it will not disappoint!
1 Roma Tomato, seeded and diced
1/4 cup Red Onion, diced
1/2 Jalapeno, seeded and diced
2 Garlic Cloves, minced
1/4 cup Fresh Cilantro, chopped
1/4 tsp Cayenne Pepper
1/2 tsp Garlic Powder
Salt to taste
In a bowl, mash up the avocado – you can make it smooth or chunky, your choice! Next, mix in the tomatoes, red onion, jalapeño, garlic cloves, cilantro, cayenne pepper, garlic powder, and juice of the lime. Salt the guac to taste, then enjoy with your favorite tortilla chips, or tacos!
Here’s a tip for you – I’m all about making this stuff ahead of time, but if you’ve ever used avocado, they can turn brown SO quickly… so, if you leave in the pits, sprinkle a little lime juice, and cover with plastic wrap touching the guac, it will keep in your fridge! See below:
