Balsamic Pear and Ricotta Naan


If you’ve never had Naan bread, you are missing out – it is an Indian oven baked flat bread, and it is delicious with fresh ingredients… or pretty much any kind of cheese on top!  I created the below recipe with what I had in my fridge – and man, was it good!  Feel free to replace the pears with sun dried tomatoes, figs, dates, apples, or fresh herbs.


1 Bosc Pear, thinly sliced

1 cup Ricotta Cheese

2 pieces Naan Bread

1 bunch Fresh Basil

1 Garlic Bulb, roasted

1/2 tsp Olive Oil

1 Lemon, zest only

2 tbsp Balsamic Vinegar

Salt & Pepper

Preheat the oven to 400°.  Cut the top of the head of garlic off, so you can see almost every clove.  Drizzle olive oil on top until all cloves are covered, then wrap in aluminum foil.  Next, lay the pears out in a glass baking dish and mix with the balsamic. Toss in the oven.  Bake for 20 minutes or so… the garlic may need a bit longer.  Warning – your house is going to smell A-MAZING! Remove the garlic and pears from the oven and let cool. In a small mixing bowl, squeeze out the garlic.  Mash up with a fork, until it is a paste.  Then, carefully fold in the ricotta cheese.  Zest the lemon into the cheese and garlic mixture, and add a pinch of salt and pepper.

Meanwhile, toast the Naan breads for 8-10 minutes until warmed.  Spread out the ricotta cheese, top with the pears, and then sprinkle some chopped basil.  Enjoy!
