This is a wonderful meat-free breakfast, full of good fats and protein!
2 Eggs, yolks only
2 tbsp Parmesan Cheese
Salt & Pepper
Preheat your oven to 400°. Carefully, cut the avocado and remove the pit. Slowly separate the yolk from the egg whites, and drop into the hole the pit left. Repeat on the other half of the avocado. Reserve the egg whites for an omelet if you want! Sprinkle each avocado with cheese and then generously salt and pepper. Bake for about 20 minutes in a baking dish until the egg is set. These would be delicious with some salsa added, or even some bacon on top (negating the meat-free part of this dish!) Enjoy!
