Asian Ramen Slaw

I’ve been brainstorming recipes for the upcoming Memorial Day holiday, and I’m telling you – this is DELICIOUS.  It has the perfect amount of tang and crunch, and is a great side dish to serve at any Memorial Day party or pot luck!

1 package Coleslaw Mix

2 packages Beef Ramen

1 cup Sunflower Seeds

1 cup Slivered Almonds

1/2 cup Green Onions, chopped

2 tbsp Black Sesame Seeds

1/2 cup Vegetable Oil

1/2 cup Sugar

1/3 cup White Vinegar

2 Ramen Flavor Packets

First, crush up the Ramen noodles until they appear to be in small pieces (I do this while they are in the packaging, with the palm of my hand).  Then, in a large bowl, toss together the coleslaw, sunflower seeds, almonds, green onion, and Ramen noodles.  To make the dressing, combine the oil, vinegar, sugar, and Ramen flavor packets.  When you are ready to serve, pour the dressing over the salad and toss.  Top with black sesame seeds and serve.

When I made this recipe to photograph, I mixed everything (including the dressing), and didn’t serve for a few hours.  I think it got even better!  The noodles start to soften, but if you don’t mind that happening, you may want to experiment and make this a few hours before serving.  I’m telling you – this is an EASY side dish that will make everyone happy!
