Sweet Corn Salsa

While I will absolutely admit that this salsa is BEST with all fresh ingredients (shout out to Sweet Corn Charlies), I’ve made it with frozen corn before and it still does the trick.  This salsa recipe is good on everything – chips, chicken, tacos… admittedly, I’ve even eaten it out of the bowl with a spoon! The dressing is to DIE for, and this will no doubt be a summer (or winter) staple at your house!


1 pint Grape Tomatoes

1 Avocado

3 ears Fresh Corn (or, 1 bag frozen Sweet White Corn, thawed)

4 tbsp Fresh Cilantro, chopped

Juice of 1 Lime

2 tbsp Vegetable Oil

1 tbsp Honey

1 clove Garlic, minced

Cayenne Pepper

Salt & Pepper

Add the corn to a large bowl.  Quarter the grape tomatoes, and add to the bowl along with the minced garlic and cilantro. Then, add in the lime juice, vegetable oil, honey, and a pinch of salt, pepper, and cayenne.  Toss all of this together and sneak a quick taste to see if it needs anything else.  Lastly, add in the avocado, diced.  You add this at the end so that the avocado doesn’t break up too much.  You can serve right away, but I like having it sit in the fridge for 15-30 minutes to let the flavors marinate.  I’ve made this ahead of time, and if you do so, just make you add the avocado no later than 30 minutes before you want to serve.  PUT THIS ON EVERYTHING!   1. This reminds me of good times at the lake – with my friends Nell and Annie. Its the perfect mix of refreshing, filling, and amazing. It tastes good with chips or on my dog treats. I LOVEEEE IT!!!
