A few years ago, I visited my friend Nicola in New York City. If you’ve ever had the chance to visit, it is nearly impossible to have a bad meal in Manhattan. Being a local and a foodie, she took us to some AMAZING restaurants. One that really stuck out to me was Cafe Gitane – they have this INCREDIBLE avocado toast that had a fresh twist with lemon, and a slight kick from some red pepper flakes. If you’re ever in NYC, I would highly recommend checking them out – they are located in the Jane Hotel, which housed survivors of the Titanic! When I came home from this trip, I was hooked – the below recipe is my recreation of this wonderful brunch recipe!
GOOD Whole Grain Bread
2 ripe Avocados
2 tbsp Red Pepper Flakes
3 tbsp Olive Oil
Pinch of Salt
In a small cup or bowl, mix the olive oil, and juice of one lemon. Spoon or brush this mixture on the sliced bread, then toast (I typically use my oven, at 375°). In a separate bowl, mix the avocado & juice of the other lemon. Add a pinch of salt.
When the toast is golden brown, spread the mixture onto the toast, and sprinkle the red pepper flakes. I then like to broil it slightly, to heat the avocado mixture. Remove from the oven, and enjoy! I love making this for brunch with a side of eggs – it is tangy, creamy, crunchy, and the kick from the red pepper flakes take it to a whole new level – enjoy!
