These are amazing, and were a huge hit over the holidays… they are the perfect thing to make for Valentine’s Day! The cookies have an almost cake-like texture, and combined with the rich addition of chocolate chips – AMAZING.
1 box Red Velvet Cake Mix
1/2 cup Vegetable Oil
1 cup Bittersweet Chocolate Chips (I like Ghirardelli)
2 cups Powdered Sugar
Preheat your oven to 375°. In a large mixing bowl, combine the cake mix, eggs, and vegetable oil. Mix together completely, until there are no lumps. Fold in the chocolate chips. Roll into 1″ balls of dough, then coat completely with powdered sugar. Place on a greased baking sheet, and lightly press down so you form thick discs. Repeat until you have coated and placed all cookies. Sprinkle a bit more powdered sugar on the top of the cookie, and then bake for 8-10 minutes. Let cool, and enjoy!
