Caramelized Onion and Goat Cheese Crostini

The contrast of the sweet and caramelized onion with the creamy goat cheese spread makes these irresistible!


2 tbsp Unsalted Butter

1 tbsp Olive Oil

1 large Vidalia Onion, sliced

1 tbsp Balsamic Vinegar

3 tbsp Mascarpone Cheese

4 oz Goat Cheese, room temperature

Salt & Pepper

1 French Baguette

In a sauté pan, combine the sliced onion, butter, and olive oil.  Sprinkle in a pinch of salt.  On medium low heat, stir and watch the onion until it is gold in color (about 30 minutes).  Add in 1 tbsp balsamic vinegar, and stir for another minute or two.  Set the onions aside to cool.  Meanwhile, slice and toast the baguette (375° until lightly golden brown).  In a bowl, combine the mascarpone, goat cheese, and pinch of salt and pepper with a hand mixer.  This should make a light and fluffy cheese spread.  Take a crostini, and spread the goat cheese mixture.  Top with the caramelized onions – these will be a hit!IMG_0358
