Grapefruit & Rosemary Sparklers

This bubbly treat is absolutely delicious, and bursting with flavor.  It is a fun cocktail for any holiday party – fresh, sweet, and effervescent.  I am a huge fan of an herb infused cocktail, and this flavor combination of Rosemary and Grapefruit is perfection.


1 bottle Prosecco

1 cup Rosemary Simple Syrup (how-to below)

1 cup Grapefruit Juice (fresh or bottled)

Fresh Rosemary & Grapefruit to garnish (optional)

Simple Syrup Ingredients:

1 cup Sugar

1 cup water

4-5 sprigs of Fresh Rosemary

There is a reason the word “simple” is in Simple Syrup – it is so freaking easy, and gives your cocktails that “crafty” taste.  In a small sauce pan, pour in water and sugar, along with sprigs of rosemary.  Give it a stir and bring to a boil until the sugar is completely dissolved. Remove from heat, and let it cool completely.  I recommend making it the night before, to really let the flavors steep together.

For the cocktail, put a healthy tablespoon of the simple syrup in a champagne glass (add more if you prefer a more sweet drink).  Then, fill the glass about 1/3 of the way full with the grapefruit juice (put in more if you don’t like a strong cocktail, but no more than 1/2 full). Then, pour in your bubbly!  Give it a quick stir and garnish with some fresh rosemary or a slice of grapefruit.  I love letting guests know what is in the cocktail through the garnish, and these sure do look pretty!  Enjoy!
