Anyone that knows my dad knows he is OBSESSED with his Big Green Egg. This Christmas, he made the BEST tenderloin – perfectly medium rare, and packed with the flavors of garlic and rosemary. This is definitely a recipe for a special occasion!
4-5lb Trimmed Beef Tenderloin
5-6 sprigs Fresh Rosemary
6 cloves Chopped Garlic
2-3 tbsp Extra Virgin Olive Oil
Salt & Pepper
Preheat your oven to 325º. Drizzle the beef with olive oil, then season generously with salt and pepper. Take the rosemary sprigs and chopped garlic, and press into the meat. Roast for about 1-1.5 hours, until the internal temperature is 130º. Then, rest for about an hour (this is the most important part!) Slice, serve, and enjoy!
