Caprese Bites

These delicious and refreshing bites are the perfect finger food for any party.  The sweet balsamic reduction provides the perfect balance to this easy app!

1 pint Grape Tomatoes

1 bunch Fresh Basil

1 8oz container Fresh Mozzarella Pearls (or, 1 fresh ball of Fresh Mozzarella)

1/2 cup Balsamic Vinegar

1 tbsp Honey

1 tsp Corn Starch

1/2 cup Extra Virgin Olive Oil

Salt & Pepper

If you are unable to find the mozzarella pearls (like these), cut up a fresh ball of mozzarella into bite-sized pieces.  Assemble the caprese sticks (make sure to put the basil in the middle, so it stays in place). Arrange them on a platter.

Then, in a small sauce pan, whisk together the balsamic, honey, and cornstarch, and bring the mixture to a boil.  Remove from heat, and you will notice it immediately thickens.  Let cool, then whisk in the olive oil until it creates a syrup.  Drizzle the balsamic mixture over the caprese bites, and then sprinkle with salt and pepper.  Enjoy!
