Blueberry, Goat Cheese, and Kale Salad

This is my own rendition of a salad that I had at a darling cafe near my office called The Hospitality Sweet.  Personally, if I’m going to eat kale, I need to make sure I rev it up a LOT so it doesn’t taste bitter.  The combination of the ingredients below make for the most delicious and hearty salad – you’ll love it!


1 bag Fresh Kale

1 pack Blueberries

1 4oz container Goat Cheese Crumbles

1 cup Candied Pecans

2 Avocados, sliced

3/4 cup Balsamic Vinaigrette

In a large salad bowl, mix together the kale & balsamic vinaigrette dressing until all leaves are lightly coated.  I’d start with about half of the dressing, then add as needed – no one likes a soggy salad!  Then, top with the blueberries, goat cheese crumbles, and nuts.  Carefully slice the avocado, and fan the slices on top. Voila!  The flavor combinations are incredible – enjoy!
