Bacon & Balsamic Brussels


I’m not sure when in the world this happened, but Brussels Sprouts have become my most favorite veggie.  It may have something to do with the fact that most restaurants make them crispy, flavorful, and with bacon – so, what’s not to love?  Because I am obsessed, I could make this recipe in my sleep!


1 lb Brussels Sprouts

2 tbsp Extra Virgin Olive Oil

3 strips Bacon, uncooked

3 tbsp Balsamic Vinegar

1/2 cup Gorgonzola Crumbles

1 tsp Salt

1/2 tsp Pepper

Preheat your oven to 425°.  Clean the brussels sprouts (wash, cut stem slightly, and then slice in half). Spread out on a baking sheet.  Add the olive oil evenly, as well as the salt and pepper.  Use your best tools (your hands!) to toss until all sprouts are covered with oil and seasoning.  Cut the bacon into small pieces, and scatter evenly across the sprouts.


Place in the oven for 20 minutes, stirring once to ensure they are crisping on all sides.  Remove the pan from the oven, and add the 3 tbsp of balsamic vinegar.  Stir until all sprouts are coated, and return to the oven for 3-5 minutes to allow the vinegar to thicken and glaze the sprouts.  Remove and sprinkle with the gorgonzola.  Enjoy – these will convert even the most stubborn brussels sprout haters!
