Truffle Cauliflower Mash


I am a total sucker for anything truffle.  I have made mashed cauliflower in the past, and had the brilliant idea of adding truffle.  It is so packed with flavor, you will not miss the potato!


2 heads Cauliflower

3 cloves Garlic, minced

1/2 cup Parmesan, grated

1/2 cup Skim Milk

3 tbsp Black Truffle Butter (or, make your own!)

Salt & Pepper

Non-Stick Spray


Preheat your oven to 425º.  Cut the florets off of the cauliflower, and arrange on a baking sheet greased with non-stick spray (I like the olive oil kind when cooking savory dishes).  Sprinkle with salt and pepper, as well as the minced garlic cloves.  Place in the oven for 15-20 minutes, until the cauliflower is fork tender.

Once the cauliflower has cooled slightly, place in a food processor.  Add in the milk, cheese, and truffle butter.  Note – I’ve found truffle butter at a few upscale grocery stores.  However, I happened to have a shaved truffle packed in oil, so I decided to make my own butter for this.  1 tsp shaved truffles along with 3 tbsp unsalted butter – voila, you have homemade truffle butter!  Blend everything together, and then serve.  Seriously – this stuff is incredibly delicious!
