Neiman Marcus Dip


A friend of mine used to bring this to all of our pot lucks when I was living in Chicago.  I hadn’t had it in years, so when I was responsible for bringing an appetizer, I remembered this gem – it was a HIT.  I’ve had 4 different people already ask me for the recipe, and man, is it simple.  See for yourself!


1 cup Mayonnaise

2 cups Shredded Extra Sharp Cheddar Cheese

8 pieces Bacon, cooked & crumbled

1/2 cup Sliced Almonds, toasted

2 Scallions, thinly sliced

Pinch of Salt

Before getting started, place the almonds in a pan on the stove on medium-high heat.  Watch them carefully as they will burn if you’re not careful!  Once they are toasted, set aside and let cool.  Meanwhile, in a food processor, blend the cheese, salt, and mayo until well combined.  Remove from food processor, and place is a medium mixing bowl.  Then, add in the bacon, scallions, and cool toasted almonds.  Toss to combine, and put in the refrigerator for about an hour.

I love serving this with Ritz crackers – everyone will love it.  Enjoy!
